Quinoa salad is a wholesome and versatile dish that has gained popularity worldwide for its nutritional benefits and adaptability. Ingredients:
1 cup quinoa, rinsed
2 cups water
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced
1/2 red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup feta cheese, crumbled
1/4 cup Kalamata olives, sliced
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste
Optional: Lemon zest for garnish
Instructions:
Place quinoa and water in the Thermomix bowl. Cook for 15 minutes at 100°C on speed 1.
Once cooked, fluff the quinoa with a fork and transfer it to a large mixing bowl to cool.
In the Thermomix bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, parsley, feta cheese, olives, olive oil, balsamic vinegar, salt, and pepper. Mix for 10 seconds at speed 2.
Add the vegetable mixture to the quinoa and toss until well combined.
Garnish with lemon zest if desired.
