Rajma Masala - Kidney Beans (TM6, TM5)

Here's a recipe for Rajma Masala, a popular Indian dish made with kidney beans, that you can easily make with your Thermomix:

Ingredients:



  1. 1 cup dried kidney beans, soaked overnight

  2. 2 tbsp ghee or vegetable oil

  3. 1 onion, finely chopped

  4. 2 garlic cloves, minced

  5. 1 tsp grated ginger

  6. 1 green chili pepper, chopped

  7. 2 tomatoes, finely chopped

  8. 1 tsp cumin powder

  9. 1 tsp coriander powder

  10. 1 tsp garam masala

  11. Salt to taste

  12. Chopped fresh cilantro for garnish



Instructions:



  1. Drain the soaked kidney beans and rinse them well. Add them to the mixing bowl of the Thermomix, along with 3 cups of water. Cook on speed 1 at 100°C for 35 minutes, or until the beans are tender.

  2. Remove the cooked kidney beans from the bowl and set them aside.

  3. Add the ghee or vegetable oil to the mixing bowl and heat on speed 1 at 120°C for 2 minutes.

  4. Add the chopped onion, minced garlic, grated ginger, and chopped green chili pepper to the bowl. Sauté on speed 1 at 120°C for 5 minutes.

  5. Add the chopped tomatoes to the bowl and cook on speed 1 at 100°C for 5 minutes.

  6. Add the cooked kidney beans to the bowl, along with the cumin powder, coriander powder, garam masala, and salt. Cook on speed 1 at 100°C for 10 minutes.

  7. Serve the Rajma Masala hot, garnished with chopped fresh cilantro.

  8. This recipe yields approximately 4-6 servings, depending on your portion sizes. Enjoy your delicious and flavorful Rajma Masala made with Thermomix!






Tips:



  • Soak the rajma (kidney beans) overnight or for at least 6-8 hours before cooking. This helps to soften the beans and reduces the cooking time in the Thermomix.

  • Rinse the soaked rajma thoroughly to remove any impurities or dirt before cooking.

  • Use the "Saute" mode in your Thermomix to sauté the onions, garlic, and spices until they are fragrant and lightly browned. This enhances the flavors of the masala.

  • Add the soaked and rinsed rajma to the Thermomix along with water or vegetable broth. The ratio of rajma to liquid is typically 1:3. Adjust the quantity of liquid based on your desired consistency.

  • Cook the rajma in the Thermomix using the "Slow Cook" or "Pressure Cook" function, depending on your Thermomix model. Follow the manufacturer's instructions for cooking times and settings.

  • After cooking, allow the pressure to release naturally or use the quick-release valve if applicable to your Thermomix model.

  • Once the rajma is cooked and tender, use the Thermomix to blend a portion of the cooked rajma and liquid into a smooth paste. This helps to thicken the masala and gives it a creamy texture.

  • Add the blended rajma paste back into the remaining rajma in the Thermomix and stir well to combine. This creates a luscious, thickened gravy.

  • Adjust the seasoning with salt, chili powder, and garam masala according to your taste preferences. You can also add a squeeze of lemon juice for a tangy twist.

  • Serve the Rajma Masala hot with steamed rice, naan bread, or roti. Garnish with fresh cilantro leaves for a burst of freshness.
