Vegetable soup is a versatile and nutritious dish with a rich history across various cultures. Originating from regions worldwide, it showcases the use of local, seasonal vegetables to create comforting and hearty soups. Ingredients:
1 onion, chopped
2 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, chopped
1 leek, cleaned and sliced
1 zucchini, diced
1 potato, peeled and diced
1 cup green beans, trimmed and chopped
1 can (400g) diced tomatoes
1 liter vegetable broth
1 bay leaf
1 teaspoon dried thyme
Salt and pepper to taste
Olive oil for sautéing
Instructions:
Place the onion and garlic in the Thermomix bowl. Chop for 5 seconds at speed 5.
Add a splash of olive oil and sauté the chopped onion and garlic for 3 minutes at Varoma temperature, speed 1.
Add the carrots, celery, leek, zucchini, potato, and green beans to the bowl. Chop for 5-7 seconds at speed 5, or until the vegetables are finely chopped.
Add the diced tomatoes, vegetable broth, bay leaf, dried thyme, salt, and pepper to the bowl. Cook for 20 minutes at 100°C on speed 1.
For a smoother consistency, blend the soup to your desired thickness by gradually increasing the speed from 1 to 5 over 20 seconds.
Remove the bay leaf and serve the vegetable soup hot. Garnish with fresh herbs or a drizzle of olive oil if desired.
