Ingredients:
500g chicken breast, cut into small pieces
2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
300g Arborio rice
1/2 cup dry white wine
1 litre chicken stock
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Chopped fresh parsley for garnish
Instructions:
Add the chicken pieces and olive oil to the mixing bowl of the Thermomix. Sauté on speed 1 at 120°C for 5 minutes.
Remove the chicken from the bowl and set aside.
Add the chopped onion and minced garlic to the mixing bowl, and chop on speed 6 for 5 seconds.
Add the Arborio rice to the bowl and sauté on speed 1 at 120°C for 2 minutes.
Add the white wine to the bowl and cook on speed 1 at 120°C for 2 minutes.
Add the chicken stock to the bowl and cook on speed 1 at 100°C for 18 minutes.
Add the cooked chicken and grated Parmesan cheese to the bowl and mix on reverse speed 1 at 100°C for 3 minutes.
Season the risotto with salt and pepper to taste.
Serve the chicken risotto hot, garnished with chopped fresh parsley.
