Now, if you're feeling a bit adventurous, you can spice up your ice cream with a little bit of chili powder. It may sound crazy, but trust us on this one. It's like a fiesta in your mouth!

But wait, is this treat even healthy? Well, we're not going to lie to you. It's not exactly a bowl of kale salad. But hey, life is short, and sometimes you just need to treat yo' self. And besides, mangoes are rich in vitamin C, right? So that counts as a health benefit, doesn't it?

 

One of the best things about creamy mango ice cream is its versatility. You can serve it on its own, or pair it with other desserts for a sweet fiesta. Want to turn up the heat? Add some sliced jalapeños on top! Want to keep it simple? Add some fresh mango chunks as a garnish.

Let's now get to the recipe for creamy mango ice cream using Thermomix:


Servings: 4-6

Prep Time: 10 mins

Total Time: 3 to 4 Hours


Ingredients:

 

500g fresh or frozen mango chunks

100g caster sugar

250g heavy cream

250g whole milk

1 tsp vanilla extract

 

 

Instructions:

 

  1. Place the mango chunks and sugar into the mixing bowl. Blend for 30 seconds on speed 8, or until the mixture is smooth.

  2. Add the heavy cream, whole milk, and vanilla extract to the bowl. Mix for 10 seconds on speed 5, or until well combined.

  3. Pour the mixture into a container and freeze for 2-3 hours, or until firm.

  4. Once the ice cream is frozen, remove it from the freezer and let it sit at room temperature for 5-10 minutes to soften.

  5. Scoop the ice cream into bowls or cones and enjoy!

 

You can also garnish the ice cream with fresh mango slices or whipped cream, if desired.

Tips:



  • Choose ripe and flavorful mangoes: Use ripe mangoes with a sweet aroma. Make sure they are soft to touch but not overly mushy. This will ensure a naturally sweet and flavorful ice cream.

  • Pre-freeze your Thermomix bowl: To ensure faster and more efficient freezing, place your Thermomix bowl in the freezer for a few hours before making the ice cream. A colder bowl will help freeze the mixture quickly, resulting in a creamier texture.

  • Cut the mangoes into chunks: Remove the skin and cut the mango flesh into small chunks. This will make it easier for the Thermomix blades to blend them into a smooth puree.

  • Blend until smooth: Place the mango chunks in the Thermomix bowl and blend on high speed until you achieve a smooth and creamy consistency. You may need to scrape down the sides of the bowl a few times to ensure all the mango chunks are fully blended.

  • Add cream and sweeteners: Pour in some heavy cream or full-fat coconut milk to give your ice cream a rich and creamy texture. You can also add a sweetener of your choice, such as honey, maple syrup, or sugar. Start with a small amount and adjust to taste.

  • Optional flavor enhancements: If desired, you can enhance the flavor of your mango ice cream with a touch of vanilla extract, a squeeze of lime juice, or a sprinkle of cardamom or cinnamon. These additions can complement the tropical flavors of the mango.

  • Chill the mixture: Transfer the ice cream mixture to a container and refrigerate for at least 2-3 hours, or until thoroughly chilled. This step helps the flavors meld together and improves the texture of the ice cream.

  • Churn in the Thermomix: Once the mixture is chilled, return it to the pre-frozen Thermomix bowl. Attach the butterfly whisk and churn the mixture on speed 3-4 until it thickens and reaches an ice cream consistency. This usually takes around 20-30 minutes, but keep an eye on it to avoid over-churning.

  • Serve or freeze: You can enjoy the mango ice cream immediately for a soft-serve consistency or transfer it to an airtight container and freeze for a few hours for a firmer texture. Remember to cover the surface of the ice cream with plastic wrap to prevent ice crystals from forming.

 

Garnish and enjoy: Serve your creamy mango ice cream in bowls or cones, and garnish with fresh mango slices, toasted coconut flakes, or a drizzle of caramel sauce for added indulgence.
